My favorite easy pie to to take to parties in the summer is the the chocolate tofu pie.  It’s super easy, high in chocolate and protein, possibly low in fat, and most importantly, delicious.  Good for vegans, and even normal people if you don’t tell them it’s vegan.Image

Ingredients:
1 bag vegan chocolate chips(many semi-sweet chocolate chips are vegan, check the label)
1 box Mori Nu silken soft tofu(this brand makes the creamiest texture)
1 graham cracker crust(no, I don’t make my own, this is my fast easy recipe for when I’m being lazy!)
4-6 spoonfuls of peanut butter(I use Trader Joe’s salted smooth)
And a teaspoon of chocolate extract never hurts!

Melt chocolate chips in the microwave or a double boiler.  Once they are just melted smooth, throw them in the blender with the tofu and blend until smooth.  Blend in the chocolate extract if adding.

Heat up the peanut butter in the microwave to make it a little runny and easier to spread.  Spread it evenly on the bottom of the graham crust.  Pour the chocolate tofu cream on top and spread evenly.  Put the pie in the fridge and cool until the chocolate solidifies(shake the pie gently, and if it doesn’t jiggle, it’s done)
While you wait for the pie, use a spatula to eat the last of the chocolate tofu cream out of the blender.  Don’t cut yourself in a chocolate frenzy.  Or maybe that’s just me…
